蔥鹽醬炒牛舌

自從吃過乾杯燒肉的蔥鹽醬,就愛上這一味,只要備好四種食材~青蔥、洋蔥、鹽和香油,其實自己做也很簡單方便,除了當作燒肉的沾醬,也可以拿來作為青菜和各種肉類炒食的調味料,香氣濃郁芬芳,滋味鹹香清爽,好喜歡!
蔥鹽醬炒牛舌
材料:
1.牛舌 400g
2.蔥鹽醬 4湯匙
蔥鹽醬
材料:
1.有機青蔥 4枝約60g(徹底洗淨再切細圈)
2.洋蔥 1/4顆約60g(切細末)
3.海鹽 1.5t
4.香油 1T
作法;
1.將蔥鹽醬的4種材料放入小盅拌勻冷藏入味備用(蔥鹽醬除了當拌炒肉類的調味料,也可以當沾醬佐料或者拿來醃漬肉類做煎炒)
2.冷凍牛舌前一晚移至冷藏退冰
3.鑄鐵平底鍋或Turk鍋或畢耶鍋,以中小火充分預熱(約需2分鐘),但不要冒大煙喔!鍋入少許油抹勻整個鍋面,再將牛舌放人鍋中,快速煎炒至七八分熟,即可加入3湯匙蔥鹽醬,繼續翻炒約10秒至九分熟即可熄火,再添入1湯匙蔥鹽醬翻拌一下至全熟即可起鍋。
