煎蛋(Fried Eggs) 太陽蛋(Sunny-side-up) 兩面煎軟蛋(Over-easy) 兩面煎蛋(Over-medium) 三面煎蛋(Over-hard) 荷包蛋

西式煎蛋依翻面次數與熟度可分為太陽蛋(Sunny-side-up) 、兩面煎軟蛋(Over-easy) 、兩面煎蛋(Over-medium) 和三面煎蛋(Over-hard),真正的中式荷包蛋應該會有對折的動作,才會像荷包(裝零錢的小錢包)。
煎蛋(Fried Eggs)
材料:
雞蛋 1顆
沙拉油 1湯匙
作法:
1.一顆雞蛋打入碗裡備用,
2.鑄鐵平底鍋用水沖洗乾淨,不擦乾,開中大火將鍋內烘乾,順便將鍋預熱至剛剛好的溫度,轉小火,加入1湯匙油,用不鏽鋼鍋鏟將油佈開,待油加熱至出現油紋,將步驟1飯碗裡的雞蛋慢慢放入鍋子正中央,放蛋的速度慢一點,讓蛋黃落在蛋白中央,而且碗要離鍋面近一點才不會使油噴濺喔!等待二三秒鐘,蛋白底部稍微凝固,再用鍋鏟將蛋白不圓的邊邊整型一下,。
3.依照喜好的煎蛋狀態,選擇下列其中一種方式完成煎蛋
(1)太陽蛋(Sunny-side-up): 小火煎至蛋白凝固就關火,也可等蛋黃至喜歡的熟度再關火,若想要蛋黃近全熟,也可蓋上鍋蓋悶煎一下。只煎一面,不翻面喔!
(2)兩面煎軟蛋(Over-easy) :小火煎至蛋白凝固,再用不鏽鋼鍋鏟將蛋翻面繼續煎約2分鐘,此時蛋黃雖凝固但仍是軟的。
(3)兩面煎蛋(Over-medium) :小火煎至蛋白凝固,再用不鏽鋼鍋鏟將蛋翻面繼續煎約5分鐘,此時蛋黃凝固且較硬。
(4)三面煎蛋(Over-hard):兩面煎蛋後再翻面一次,煎至雞蛋全熟,蛋白蛋黃皆硬。
(5)荷包蛋:小火煎至蛋白邊緣和底部呈金黃略焦酥狀,對折整形成荷包狀即可。
